DCL Ministries is pleased to have the creative mind behind Yarie Cooks & Meal Prep Business as our featured ministry for this month of November. As we interviewed this woman of God, most recently, on Dovetales radio show we discovered that the road traveled was not always an easy one, but just as she chose to cook healthy, nutritional meals, she also chose to be governed by God as well. It is no surprise that her favorite scripture is 2 Corinthians 5:17, “Therefore, if anyone is in Christ, the new creation has come. Yaritza R. is the creative mind behind Yarie Cooks.
She loves creating colorful and delicious dishes, centered on her love for Nutrition and healthy alternatives.
She is a United States Marine Corps Veteran, a graduate of the world renowned Le Cordon Bleu, Studying her BS in Nutrition Science at Kaplan University.
She has been able to work free-lance gigs for one of the country’s biggest Restaurateur: Darden Headquarters— Twice. Talk about a blessing! What an experience.
She was employed with one of Disney’s Resorts Banquet kitchens, and also got to work on some Food Styling Projects for Disney.
Founder of a Meal Prep Company, where she provides tailored meals for clients with different nutritional needs, also gives one-on-one cooking classes to clients, she also shares video tutorials and blogs recipes to share her Dishes with the public.
The Holidays are upon us! This means we will be having gatherings with friends and family for the next few weeks, potlucks at work, and everything in between. A lot of the time, we want to try something new for our holiday spread, but we might find it hard to deviate from the comfort food we’ve grown up to love. Fall ingredients are everywhere. Pumpkin spice is everywhere, even in our coffee! Sweet potato is a staple of the holidays so, I want to share with you an easy and delicious recipe using sweet potato, but not in a pie, or a casserole.
Introducing…The Roasted Sweet Potato Salad.
Beautiful in color, earthy, tastes great and will be simple to make. I hope you venture out and try it! You will not regret it!
INGREDIENTS:
4 Cups Sweet potatoes- peeled /small diced
2 large Beets- peeled/small diced
2 Cups of Brussel sprouts- cleaned, cut in half.
2 Tbsp olive oil
Salt and black pepper to taste
Dressing
Juice of 1 Orange
2 Tbsp Olive oil.
Preheat your oven to 400 degree.
1)In a large bowl mix vegetables, season with salt and pepper, and add the 2 Tbsp of olive oil.
2) In a baking sheet, spread the salad in one even layer, so that it cooks evenly.
3) Roast for 35-40 min. Once tender, Plate and add the juice of the orange and remaining olive oil.
4) Mix. Enjoy!
